Jam Tarts

Fill with a variety of different jams bought or homemade for a colourful plate of teatime treats.

Serves: 12


  1. Preheat oven to fan 180°C, conventional 200°C, gas 6.
  2. Mix flour and salt in a bowl, rub in butter using fingertips until the mixture resembles fine breadcrumbs.
  3. Using a knife, mix with cold water to form a stiff dough.
  4. Roll out pastry thinly. Cut into rounds using a 7.5cm diameter fluted pastry cutter and line a lightly greased 12 cup bun tin.
  5. Put a little jam in each, do not over fill. Bake for 15 minutes.
  6. If liked, fill with a little extra jam when cooked.

Hints and Tips

  • If making lemon curd tarts, prick the pastry cases with a fork and bake blind for 7 minutes, fill with lemon curd and cook for a further 5-10 minutes.

I need help!!! I don't know what to make for a school comic relief bake off! It has to look appetising, taste really good but also look professional. Are theses a good idea??? Please, I beg anyone who is reading this, HELP ME! For the first time I actually, really need it!!!

always made these tarts for my kids on a tight budget they always loved them and they used to help, nice to see some of the older recipes coming back

  • 100g McDougalls Plain Flour
  • Pinch salt
  • 50g butter
  • 2 Tbsp cold water to mix
  • Jam or lemon curd
