Pesto, Goat’s Cheese & Cherry Tomato Tart

A simple, stunning vegetarian tart for a light lunch in the garden with a green salad.

Serves: 4


  1. Make up flaky pastry as recipe.
  2. Preheat oven to fan 180°C, conventional 200°C, gas 6 and grease a baking sheet.
  3. Take half the pastry and roll to a rectangle approximately 4mm in thickness, 20cm x 28cm.
  4. Place pastry onto baking sheet; indent with a sharp knife 2cm from the outside edge, without cutting through the pastry. Spread the centre of the pastry with pesto, and top with shallots and cherry tomatoes.
  5. Arrange the goat’s cheese over the tomatoes and brush pastry edge with milk or beaten egg.
  6. Bake for 20 minutes until the pastry is well risen, and the cheese is golden.

  • 1 small punnet cherry tomatoes, halved
  • 100g goat’s cheese, sliced
  • Milk or egg to glaze
