Mini Quiches

These delicious savoury morsels make delicious canapés, served warm from the oven. They are an excellent way of using up leftover pastry and other ingredients. Try experimenting with a selection of different cheeses and fillings.

  1. Preheat oven to fan 170°C, conventional 190°C, gas 5.
  2. Mix flour and salt in a bowl, rub in butter using fingertips until it resembles fine breadcrumbs.
  3. Using a knife, mix with cold water to form a stiff dough.
  4. Roll out pastry thinly. Cut into rounds using a 7.5cm diameter pastry cutter and line a lightly greased 12 cup bun tin.
  5. Fry the bacon and onion in the oil until cooked, cool, and then place a small quantity in each pastry case.
  6. Top each quiche with a little grated cheese.
  7. In a measuring jug beat milk, egg, seasoning together and then pour a little mixture into each case.
  8. Bake for 15 minutes until the pastry is crisp and the filling set.

Hints and Tips

  • Try replacing bacon and onion with chopped sunblush tomatoes and chopped black olives or shredded spinach and diced goat’s cheese.

  • 100g McDougalls Plain Flour
  • Pinch salt
  • 50g butter
  • 1 tbsp cold water to mix
  • 3 rashers smoked bacon, finely chopped
  • ½ small onion, finely chopped
  • ½ tbsp olive oil
  • 25g mature cheddar, finely grated
  • 150ml milk
  • 1 medium egg
  • Seasoning
