McDougalls Shortcrust Pastry

Probably the most popular and versatile of all the pastries. It should be crisp and not too crumbly. Using butter gives a wonderful flavour.

  1. Sift flour and salt into a large bowl.
  2. Add fat, cut up into small pieces. Rub the fat into the flour with your fingertips until the mixture resembles breadcrumbs.
  3. Add sufficient water to bind mixture into a stiff dough.
  4. Knead lightly on a floured surface. Roll out and use as required.

  • 200g McDougalls Plain Flour
  • Pinch of salt
  • 100g butter, hard margarine or half margarine, half lard
  • 2 Tbsp cold water approximately, to mix
