Brandy or Rum Butter

A delicious seasonal recipe to serve with Christmas pudding and mince pies. Try replacing the brandy with Calvados or Cointreau. Can be made in advance and will keep well in the refrigerator over the Christmas period.

Method

  1. Beat together butter and icing sugar.
  2. Add brandy or rum and continue beating until silky in appearance.
  3. Chill until required.
