Potato Scones

A great recipe for brunch after a late night, serve with bacon, maple syrup and eggs.

At a glance

Preparation time: 10 minutes
Cooking time: 30 minutes

Serves: 8

Method

  1. Mash potatoes; add salt, butter and flour to give a stiff mixture. Cool slightly.
  2. Turn out on to a floured surface, knead lightly and roll out into a circle approximately 22cm in diameter, 1cm thick.
  3. Cut into 8 triangles and cook on a hot greased griddle or heavy, flat-bottomed frying pan for 4-5 minutes on each side until golden.
  4. Serve hot, delicious with poached eggs.

I added some basil leaves on top and I used a little of both of red pesto and green pesto, be careful though as too much will spoil, add with a pastry brush to achieve a thinner coating.

This recipes takes me back to the cold winter of 1962/3 when as a little girl we would eat these potato cakes as we called them in front of a blazing coal fire on Sunday tea time. I make them for my kids and they love them too.

great to find this recipe as my husband is a scot and likes them with his sunday breakfast, so instead of buying them im going to have a go at making them

try putting some grated cheese on the top then put under a grill until the cheese has melted delicious
