Gingerbread Men

Young and old, who can resist these cheeky chaps!

At a glance

Preparation time: 25 minutes
Cooking time: 10 minutes

Serves: 16 depending on size of cutter used


  1. Preheat oven to fan 150°C, conventional 170°C, gas 3.
  2. Sift the flour, bicarbonate of soda, salt and ginger into a bowl.
  3. Melt the butter in a pan with the golden syrup and sugar.
  4. Pour onto the dry ingredients, mix to a firm consistency and knead
  5. lightly to form a smooth dough.
  6. Roll out to a thickness of about 2-3mm, cut out gingerbread men
  7. with a cutter and place on a greased baking sheet. Indent eyes and buttons using the end of a skewer; use the tip of a spoon to create the mouth.
  8. Bake for 10 minutes. Allow to cool slightly before putting on wire rack.

Hints and Tips

  • Biscuits made with syrup are often soft after baking but will crisp on cooling.

Has anybody else had trouble with this recipe? I made them the other day and they have gone really hard (the shortbread that I made at the same time is still fine). The only parts that I changed to the recipe was honey instead of golden syrup (a similar recipe I used before included honey so assumed that would be fine) and added some extra spice. Quite confused at why they are this way....

  • 200g McDougalls Plain Flour
  • ½ tsp bicarbonate of soda
  • Pinch salt
  • 1-2 tsp ground ginger
  • 75g butter
  • 3 Tbsp golden syrup
  • 75g soft brown sugar
