Summer Berries Shortcake

Decorate with your favourite summer berries and enjoy with a cup of tea in the garden.

Method

  1. Sift the flour into a large bowl, and then rub in the butter until the mixture resembles breadcrumbs.
  2. Using a palette knife stir in sugar, vanilla essence and milk and combine into a dough.
  3. Knead well to form a smooth dough.
  4. Roll the dough into a sausage shape approximately 6cm in diameter. Wrap in cling wrap and chill until the dough is firm.
  5. Preheat the oven to fan 150ºC, conventional 170ºC, gas 3.
  6. Grease a baking tray.
  7. Remove dough from fridge and cut into slices just under 1cm in thickness.
  8. Bake for 25 minutes until pale and golden. Cool on a baking rack.
  9. To assemble, mix together mascarpone and icing sugar.
  10. Top each shortcake with mascarpone, scatter with summer berries and then dust with a little icing sugar.

Hints and Tips

  • Assemble the shortcake just before serving, otherwise it will soften. In warm weather chill the shortcake just before baking.

  • 175g McDougalls Plain Flour
  • 175g butter
  • 50g caster sugar
  • Few drops vanilla essence
  • 2 tsp milk
  • 250g tub mascarpone
  • 25g icing sugar
  • Icing sugar for dusting
  • 200g strawberries, raspberries and redcurrants
