Parsnip, Honey and Thyme Loaf

A delicious bread for serving warm with butter and bowls of steaming hot soup

  1. Prepare two tins by greasing with butter and dusting with cornmeal.
  2. Mix the flours, salt, sugar, yeast, water, honey and butter, thyme and parsnips together and knead for 8 minutes. Prove in a warm place for 1 ½ hours. Knock back and place into prepared tins, sprinkling with the oatmeal. Prove for a further hour.
  3. Preheat oven to 200ºC conventional, 180ºC fan, gas 6. Bake for 35 minutes, glazing halfway through with the yoghurt/milk mix.

  • 500g White Bread Flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 Pack Yeast
  • 300ml water
  • 2 Tbsp honey
  • 25g butter
  • 2 parsnips, peeled, cored and grated
  • 1 tbsp fresh thyme leaves
  • Coarse oatmeal
  • Yoghurt/milk mix to glaze
