Corn and Chilli Bread

A lighter style bread with an almost cake like texture

Method

  1. Mix the eggs, milk and melted butter in a bowl. In another bowl mix the cornmeal, sugar, flour, bicarbonate of soda, salt and chilli.
  2. Pour the butter/milk mix into the dry ingredients and beat into a smooth batter.
  3. Pour into a prepared tin (greased with butter and dusted with cornmeal) and pour in batter.
  4. Bake for 20 minutes at fan 170°C until pale golden colour and cooked through (a skewer comes out clean).

  • 2 eggs
  • 250ml buttermilk
  • 60g butter
  • 185g cornmeal
  • 30g sugar
  • 60g self raising flour
  • ½ tsp bicarbonate of soda
  • 1 tsp salt
  • 1 red chilli, finely chopped
